In 2017, Adrien Pélissié and Julien Brustis, winemakers trained in Bordeaux, brought viticulture back to the Versailles Plain; 150 years after the phylloxera, the vineyard has returned to the lands that once supplied the royal table.

From the Royal Table

The Domaine de La Bouche du Roi takes its name from the court of Louis XIV, known as the “Sun King”.
The estate’s name is a tribute to the court of Versailles, “La Bouche du Roi” referred to the department of the King’s Household responsible for wines and the table: sommeliers, cupbearers, and chefs, who oversaw what was served to the King.
It was the supreme authority on French taste, where the most closely watched table in Europe was set each day. By adopting this name, the estate embraces this heritage and gives voice to a culinary art that Versailles had elevated to its highest form.
The Vineyard
The Vineyard

Today, Domaine de La Bouche du Roi encompasses 27 contiguous hectares, farmed organically since the first vines were planted.
The vineyard’s six grape varieties were selected specifically for the 41-million-year-old limestone soil of the Versailles Plain:
White: Chenin Blanc • Chardonnay • Sauvignon Blanc
Red: Merlot • Cabernet Franc • Pinot Noir

That philosophy is at the heart of the estate’s approach to winemaking.
Organic farming is paired with an emphasis on biodiversity. Native hedgerows provide habitat, a wooded refuge sits within the vineyard, and a historic stone wall marks the property’s lower boundary where the vines meet the surrounding woods.
The vineyard sits on an elevated plateau approximately 140 meters above sea level, where exposure to the winds helps keep the grapes healthy during the final stages of ripening and offers protection from spring frosts.

We are winemakers. We are also history buffs, and the history of the Versailles Plain has long fascinated us. Under Louis XIII, the Château de Davron and our lands belonged to Claude de Bullion, Superintendent of Finances and creator of the Louis d’Or. Louis XIV later gifted them to Louise de La Vallière. The very name of our estate takes its name from the department of the King’s Household, responsible for wines and the royal table.

Where others saw a forgotten terroir, we saw a challenge to take on: to restore Versailles’s wines, 150 years after the disappearance of the Île-de-France vineyards due to phylloxera. On this 41-million-year-old limestone soil, aligned with the Grande Perspective envisioned by Le Nôtre, we are crafting today the wine of tomorrow.
